Located in a biological Conservation Corridor, this sugarcane decaf from Valle del Cauca was decaffeinated using ethyl acetate- an organic compound derived from sugar cane- to remove 97% of the caffeine from the coffee beans. This process tends to leave a pleasantly sugary flavor.
